【代貼】洋蜜漬火腿 HONEY BAKED HAM

網友 eh 和我用書信討論 肴肉、叫化雞、紅糟... 等的各種做法以後,很客氣地提供一個她的拿手菜給我在火雞節做來吃著玩兒。
感念她的客氣和禮遇,在徵得她的同意以後,代貼到《七事堆》來和住在美國的網友們分享。
原先想同時譯成中文,以方便其它地區的網友們參考。總因自己的譯筆太過艱澀,加以時間不夠而決定放棄。
文中有關 加底線、粗體字,加色highlight 等部份都是 eh 寄給我的原稿裡本有的。
相信有興趣的網友看了之後,除了可以了解 eh 做洋蜜漬火腿當中自己提點之處,是她認為應該注意,同時也是她四處博得友人讚賞的重點所在。

Honey Baked Ham 1


Ingredients:
  • Half fully-cooked ham
  • Brown sugar (1+ cup)
  • 1 can of sliced pineapple
  • Cherry (12 pieces)
  • Corn Starch
  • Green-Leaf Lettuce


Procedure:
  1. HoneyBakedHamThe night before serving,
    Remove the skin
    HoneyBakedHam(keep the fat) from the thawed ham,
    HoneyBakedHamsoak in water with a deep pot so that most of the ham is immersed in water & boil,
    turn off
    the heat when the water is boiled.
    Leave it open in the pot on your stove overnight.
  2. About 5 hours before serving, LAYER a double-layered baking pan with aluminum foil.
    Put the ham in the center of the pan,
    and hand coat a layer of brown sugar (about a cup) onto the ham.
    Bake it at 325˚F for about 3 hours.
    After it baked for about 2.5+ hours and the ham is golden brown (time varies), turn off the temperature &
    take out the ham and
    pour the baked juice into a small sauce pan,
    put the ham back to the oven & keep it warm.

  3. Just before serving, boiling the baked juice (you can remove some fat from the juice at this time), add the pineapple juice from the can and brown sugar into the sauce pan.
    Taste the sauce till it is sweet enough, boil the sauce. Use corn starch to make the gravy. Pour the gravy on the serving bowl.
  4. Layer the serving plate with the green leaf lettuce and set the ham on the center of the plate. Pin the pineapple rings with cherry-in-toothpick around the ham.
  5. Serve sliced ham with pineapple gravy.



Notes:

I guess the reasons make the ham juicy, tender & tasty are:

  1. soak in water over night makes the salt come out & water comes in.(I put a S.S. spoon in the bottom before I put Ham in the pot to boil. It is to avoid the big air bubble when boiling)
  2. coating 1+ cup of brown sugar on the ham(lean meat surface is hard to coat) will make the sweet taste & golden color.
  3. used the baked juice(I will remove the top layer of fat for health reason now), pineapple juice & brown sugar(I like on the sweeter taste).
