再談 甜豆兒

老美對甜豆似乎情有獨鍾,除了稱呼他們心愛的人作「蜂蜜」(honey)以外,也常聽得老美左一聲甜豆兒右一聲甜豆兒的沒完。



如果不相信咱說的,不妨到 yahoo, google 或 msn 的蒐索欄輸入 "sweet pea" 查圖片看看。蒐索引擎找出來的百分之九十都是女人、小孩兒的照片。

您佬可別告訴咱說,這些洋人的名子都叫「甜豆兒」吧?



咱今兒再談甜豆兒,要談咱是怎麼料理它的。


西式菜肴裡怎麼燒甜豆兒,咱沒研究(會用甜豆燒西式餐點的請不要客氣,僅管貼上來)。咱只會老中口味的燒法:

美國市場賣的甜豆兒的分級法是,愈小愈嫩就賣得愈貴。
豆兒愈小,豆仁就愈沒得吃頭(還沒長大就被魔手催殘了--摘掉了),所以要吃就得連它的豆莢一起吃。

甜豆兒用橄欖油快炒:
油稍微有一點兒熱(橄欖油燒紅了會變質)就下,翻兩翻,在還沒透之前就起鍋。
千萬別老土,加水加蓋去悶它,否則甜豆兒就成了爛豆兒了。


甜豆兒絲拌麵:
甜豆兒切絲,如果能配一點生紅椒絲,和一點兒有味道的雞絲更妙。(這些都是冷的)
麵煮好乘進碗裡,把這些絲「們」(英文文法用在中文裡--向咱朋友小孩學的)蓋在熱麵上,趁熱拌著吃。

這個家常麵,是咱家的名點。來咱家突擊檢查,賴著留下吃飯的,多少都吃過。

至於那些食「麵」知味,下午來家裡坐,明知道是個青黃不接兩頭不著的時辰,雖然吃飯時間沒到,也會想盡辦法找個肚子餓的理由,混一頓「簡單的」下午麵點吃吃。說白了,就是要吃這個甜豆兒絲拌麵。

家裡有在長的小孩的,不妨試試這個甜豆兒麵。靈巧一點的小孩,看兩次就會自己做了。


「....啥?要看照片兒?」

麵一上桌就西里乎魯地下肚了,那有時間照?
誰肯去照?
咱家的甜豆兒絲麵銷得快,誰照誰就沒得吃。
